#103 - Blueberry Pumpkin Cheesecake Pie and Happy Thanksgiving!

And now for the Blueberry Pumpkin Cheesecake Pie ... in a BLENDER!
Those that know me understand I'm an improviser in the kitchen. Sometimes, I strike out and sometimes I hit it out of the park. This pie was a Grand Slam. Most of it was made from scratch with things in the fridge so if you attempt this, feel free to improvise with what you have in the fridge. All you really need is a blender.
Have a prebaked pie crust.. whether from the freezer section of your store or home made.. make it in advance and cool it down.
For the pumpkin pie.. Into the blender...
Preheat the oven to 350 degrees
2-3 cups cooked pumpkin (from can, cooked fresh - any kind of yellow squash will work). Cool if cooled
1/4-1/2 cup cottage cheese
1 Tablespoon of vanilla
1/2 teaspoon salt
2 Eggs
Up to a 1/2 cup of milk or half n half
Honey and coconut sugar to taste (maybe a 1/2 cup or so)
Various spices like cinnamon, nutmeg, cardamon, etc from a pinch to 1/2 teaspoon or more.
Optional - handful of unsweetened shredded coconut
Blend until smooth. Add milk slowly until barely blended and enough so that the cottage cheese is creamed. I don't like a lot of sweetness but if you do, add more. Dip your finger in and taste the batter for sweetness.
Cook in the oven for 30-60 minutes depending on your oven temp. It's done when the top is brown and puffed up in the middle. Let it cool down in the oven if you're not sure about it being done and meanwhile prep the blueberry topping...
Blueberry topping...
I had some cooked blueberries around from a cooking session a few days earlier. Any kind of jam or cooked down fruits work. If you want to know what I did, get a few cups of fresh blueberries, put them in a pot and cook slowly on the stove until it's a liquid concoction. Then refrigerate as long as you need. When the pie is cooked and almost room temperature, put a layer of cooked blueberries on the top of the pie and let cool down more. I use 1/2 cup or more on top of the pie.
Cheesecake topper
Into the blender ...
1 cup of plain Greek yogurt (whole milk yogurt is best)
1 cup or so of cottage cheese
1/4 cup of honey or other sweetener (more to taste)
Juice of one lime or lemon or other citrus
1 teaspoon of shaved peel from the citrus
1 egg
Blend until smooth. pour on top of the pumpkin/blueberry pie.
Bake in the 350 oven for about half the time the pie cooked or until lightly browned.
Remove from the oven, Let stand at room temp until cool. Eat at room temp or pop into the frig for an hour. Tastes great the next day.
My family has begged me several times the last few weeks for this pie. It's different every time, kind of like a jazz session. :)
